Mmmmm .... salsa
Just made a margarita salsa:
(Don't know where the original for this recipe comes from - it is handwritten (not mine) on a very old and nearly illegible piece of paper)
3 cups coarsely chopped tomatoes
1/2 cup finely chopped red capsicum
1/2 cup finely chopped red onion
2 medium jalapeno chillies, seeded and minced
1/4 cup tequila
1/4 cup lime fresh lime juice
2 tablespoons lime zest
1/2 tsp ground cumin
Mix it all together and serve cold.
Imagine that - my three favourite flavours in one mouthful - chilli, tequila, and lime.
